  • ½ bunch fresh mint, finely chopped (stems removed)
  • 4 medium tomatoes, finely diced (or 200 g cherry tomatoes, quartered)
  • 4 spring onions (green onions), finely sliced (white and green parts)
  • 1 cucumber, peeled and finely diced (optional)
  • Dressing:
  • ¼ cup extra-virgin olive oil
  • 3 tablespoons lemon juice (freshly squeezed)
  • Salt and freshly ground black pepper, to taste
